Banana oat bread is the healthier version of quick bread because there is no processed sugar or wheat flour. Banana oatmeal bread is made of oats instead of flour. Christmas version that includes gingerbread spice can be easily made for a dessert or breakfast in December.
How to make banana oat bread?
You need a mashed banana, oats, gingerbread spice, sunflower seeds, carob syrup, or blackstrap molasses to make it moister and give the extra Christmas taste. Mix all the dry and wet ingredients together, pour into a loaf pan, and bake.
Making banana oat bread takes a maximum of 45 minutes. The preparation takes no more than 10 minutes and the rest includes baking.
No baking powder or flour mixture is needed.

Ingredients
Oats: I used quick oats but rolled oats should work as well. The smaller the oats the more bread-like it becomes. Use gluten-free oats if needed.
Banana: Make sure to use a ripe banana. The riper the sweeter the bread. Don’t be afraid of the fructose inside a fruit. Fruit is the most important food group to prevent chronic illnesses. A ripe banana is like an egg substitute that holds the dough together.
Gingerbread spice mix: If you don’t have a mix, do it yourself. 1-2 tsp ground cinnamon, 1 tsp ground ginger, 1 tsp ground cardamom, 1 tsp ground nutmeg, 1 tsp allspice, ½ tsp ground clove. Use 1 tsp of the mix.
Carob syrup: Can be left out but I used it to add sweetness and tanginess. Blackstrap molasses or dark molasses can be used instead.
Sunflower seeds: Adds an extra crunch. Can be left out.
Cocoa hazelnut butter: I always use healthy “Nutella” that consists of hazelnuts, dates, and cocoa. Peanut butter or any other nut butter works but for me, hazelnut taste is the best with gingerbread spice.
Shredded coconut: For sprinkling to make it more like a Christmas dessert.
Step by Step instructions
Step 1. Smash bananas and add gingerbread spice mix, carob syrup, sunflower seeds, and a pinch of sea salt. Mix.
Step 2. Add oats and mix until smooth. Add a bit more oats if the dough is too liquid.
Step 3. Pour into a loaf pan and bake at 356°F (180°C) for about 20-30min.
Step 4. Stir with cocoa hazelnut butter or any other. If it’s too thick, mix it with a few tbsp of almond milk or any other milk.
– Sprinkle with shredded coconut to make it more Christmassy.

Christmas Banana Oat Bread (vegan)
Ingredients
- 2 bananas
- 1 ⅓ cup cup oats (more if needed)
- 1 tsp gingerbread spice mix (see notes)
- 1 tbsp carob syrup (see notes)
- 2 tbsp sunflower seeds (optional)
- sea salt
Topping
- 2 tbsp cocoa hazelnut butter (see notes)
- 2 tbsp shredded coconut (optional)
Instructions
- Mash bananas.
- Add gingerbread spices, sunflower seeds, carob syrup, and a pinch of salt. Mix well.
- Add oats and mix. Add more oats if the dough seems too wet. (The wetter the longer it bakes)
- Pour into a loaf pan and bake at 356°F (180°C) for about 20-30min.
- Top with hazelnut butter and shredded coconut.
- Let it cool down at least 15 minutes before cutting.
