I have always been a lover of Mexican food. Of course, most of the Mexican places we have in Estonia are rather Mexican-American food. But still, it tastes delicious. 

I remember when I couldn’t tell a difference between a burrito and a taco. There are so many different meals with tortillas, like tacos, enchiladas, quesadillas, etc.

Can you tell them apart? Don’t worry, let me lay out the differences between the main tortilla dishes for you.

The beginner's guide to Mexican food

I always thought that tacos have hard shells and I was confused when I ordered tacos and got small soft tortillas. So, it turns out that tacos can be hard or soft-shelled and filled with fish, shrimp, meat, or even jackfruit. Other ingredients are usually lettuce, tomato, cheese, and sour cream.

A burrito is similar to a taco but it’s bigger and eaten as a main course. It’s wrapped in a corn tortilla and the filling consists of lots of vegetables, beans, cheese. Burrito is rolled and is better to eat as it won’t fall apart that easily. 

Seems to me like every time I’ve ordered a burrito I’ve gotten it with rice but it came as a surprise to me that in Mexico they don’t put rice inside a burrito as it takes away the real taste of vegetables, beans, cheese, meat, and sauces. So, adding rice came from the US.

Enchiladas are also similar to a burrito but it’s made with a corn tortilla. The sauce has a big part in it. A burrito is often eaten with hands however an enchilada is ofter eaten on a plate as it is too saucy. Sauces could be chili or cheese based. The ingredients inside are almost the same as in every other dish: vegetables, beans, cheese, meat, or even potatoes.

Quesadillas are another meal that are made of tortillas. Originally corn tortillas are used but in Northern Mexico and the US, it’s often made with a wheat tortilla. A full quesadilla is made of two tortillas that have a layer of cheese in-between. A half-quesadilla is made with a single tortilla that is folded into a half-moon shape.

The original Mexican quesadilla filling is cheese and it is served with guacamole, red salsa, and chopped onion.

I knew that quesadillas can also be filled with black beans, tofu, or spinach but turns out that these have also come from the US. And another fun fact is that a quesadilla which is made with pizza ingredients is called a “pizzadilla”.

Probably all of you know nachos. It’s made of tortilla chips which are put in the oven with cheese or cheese based sauce and sometimes refried beans, beef and jalapenos too. It can be served as a side dish or the more toppings you have it could be substantial to serve as a main dish.

I was surprised then I discovered that fajitas and chimichangas are American creations. For chimichangas, it makes sense as it is a deep-fried burrito. Fajitas were created when they wanted to mix meat and spices like cumin. Faja is a word for “strip” in Spanish.

I always thought that a wrap is like a cold burrito but turns out that in Mexico all wrap-like dishes are called burritos. The word wrap came from California.

I created this super easy homemade veggie quesadillas recipe when me and my boyfriend were craving Mexican cuisine on a Saturday night. We wanted something we hadn’t eaten for a while but we wanted to make it ourselves. So, these easy homemade veggie quesadillas mixed with fajita spices were born.

Homemade Veggie Quesadillas

 Makes 2 quesadillas:
  1. Cut red pepper and tomato into cubes.
  2. Add beans and pepper into the pan.
  3. In a few minutes add corn, tomatoes, and cheese.
  4. Add spices, Chipotle, and mix.
  5. Put one tortilla on another pan.
  6. Add half of the filling, and top with another tortilla.
  7. Fry until golden and turn around.
  8. Do the same with the other side.
  9. Serve with sliced avocado.
