Making vegan buckwheat pancakes is as easy or even easier than making regular pancakes. Buckwheat pancakes can also be made with buckwheat groats but this recipe is made with buckwheat flour.

This vegan buckwheat pancake recipe has only 3 ingredients and it’s also gluten-free. You only need buckwheat flour, banana, and vanilla soy milk. No baking powder is needed.

Ingredients

Buckwheat flour: I used regular buckwheat flour that has a nuttier taste than raw buckwheat flour which might work as well.

Banana: Mashed banana is the substitute for egg that holds the pancake batter together and also gives sweetness. Or use flax egg or regular egg instead.

Vanilla soy milk: Can use almond milk, or any other plant-based milk but not coconut milk because of the extra fat or regular milk. But vanilla flavored gives the extra taste and hides the buckwheat flavor. Or just add vanilla extract or a vanilla pod.

Step by step instructions

Step 1. Blend together buckwheat flour and wet ingredients, banana, and vanilla soy milk – don’t add all the milk at once.

– See the consistency and add more milk if you prefer a more liquid pancake batter. Stir the batter from time to time as it gets thicker and add more milk if needed.

Step 2. Bake on the lower heat. Use extra virgin olive oil, avocado oil, or coconut oil.

Step 3. Serve with any berries, fruit, nut butter, or anything you like.

Optional add-ins

– Chia seeds: If you want to add healthy Omega 3 fats.

Cinnamon: Make sure to use Ceylon cinnamon and organic if possible.

– Cocoa powder: If you’re a chocolate lover. In that case, I’d suggest adding more sweeteners like pure maple syrup, honey, or any other.

  • 2 cups soy vanilla milk (see notes)

Instructions

  • Blend half of the soy milk, buckwheat flour, and banana.
  • Add more milk if you want the batter to be more liquid.
  • Cook on low heat.
  • Stir the batter from time to time and add more milk if it gets thicker.
  • Serve with berries, peanut or almond butter, vegan yogurt, ice cream, maple syrup, chocolate chips, vegan butter, or anything you like.

Notes

Soy vanilla milk: You can substitute half of it with water. Or if you don't have vanilla milk then use regular soy milk or almond milk and add 1 tsp vanilla extract.
