Vegan Buckwheat Pancakes

Vegan buckwheat pancakes are like your granny's wheat pancakes but healthier. Only 3 ingredients needed, gluten free and vegan.

Ingredients

  • 1 cup buckwheat flour (125g)
  • 1 big banana
  • 2 cups soy vanilla milk (see notes)

Instructions

  • Blend half of the soy milk, buckwheat flour, and banana.
  • Add more milk if you want the batter to be more liquid.
  • Cook on low heat.
  • Stir the batter from time to time and add more milk if it gets thicker.
  • Serve with berries, peanut or almond butter, vegan yogurt, ice cream, maple syrup, chocolate chips, vegan butter, or anything you like.

Notes

Soy vanilla milk: You can substitute half of it with water. Or if you don't have vanilla milk then use regular soy milk or almond milk and add 1 tsp vanilla extract.
