Equipment

  • 8 muffin cups (I used silicone)

Ingredients

  • 20 dates
  • 10 tbsp raw buckwheat flour
  • 4 tbsp cacao
  • 1/3 cup coconut milk
  • 1/2 cup water

Instructions

  • Blend dates with water
  • Add flour, cacao and coconut milk
  • Blend until the mixture is smooth and well combined, forming a thick, dough-like consistency. Adjust consistency if needed by adding a little more water or flour. The mixture should hold its shape but not be too sticky.
  • Scoop the dough into muffin molds (I used silicone ones) and bake at 350°F (180°C) for about 25 minutes. These muffins are delicious both hot and cold!
