vegan date chocolate muffins

Date Chocolate Muffins (vegan & GF)

Vegan and gluten-free moist chocolate muffins to enjoy guilt free.

Ingredients
  

  • 20 dates
  • 10 tbsp raw buckwheat flour
  • 4 tbsp cacao
  • 1/3 cup coconut milk
  • 1/2 cup water

Equipment

  • 8 muffin cups (I used silicone)

Method
 

  1. Blend dates with water
  2. Add flour, cacao and coconut milk
  3. Blend until the mixture is smooth and well combined, forming a thick, dough-like consistency. Adjust consistency if needed by adding a little more water or flour. The mixture should hold its shape but not be too sticky.
  4. Scoop the dough into muffin molds (I used silicone ones) and bake at 350°F (180°C) for about 25 minutes. These muffins are delicious both hot and cold!
