Date Chocolate Muffins (vegan & GF)

- 20 dates
- 10 tbsp raw buckwheat flour
- 4 tbsp cacao
- 1/3 cup coconut milk
- 1/2 cup water
Blend dates with water
Add flour, cacao and coconut milk
Blend until the mixture is smooth and well combined, forming a thick, dough-like consistency. Adjust consistency if needed by adding a little more water or flour. The mixture should hold its shape but not be too sticky.
Scoop the dough into muffin molds (I used silicone ones) and bake at 350°F (180°C) for about 25 minutes. These muffins are delicious both hot and cold!
