Mango Chocolate Easter Egg Truffles (vegan)

Mango is my all-time favourite fruit. And coconut is a very close second. So when Easter came around and I wanted to make something a little special, combining the two just made sense.

These Mango Chocolate Easter Egg Truffles are vegan and dairy-free + no baking needed. Just sweet mango puree, shredded coconut and chocolate in the shape of an Easter egg. Simple as that.

Mango Chocolate Easter Egg Truffles (vegan)

Naturally sweet, simple, delicious, and healthy treat for Easter
Prep Time 15 minutes
Servings: 6 truffles
Course: Dessert

Ingredients
  

Filling
  • 5 tbsp shredded coconut
  • 3 tbsp 100% mango puree
  • 1/2 tsp vanilla
  • 2 tbsp coconut yogurt (optional)
Coating
  • 2.5 oz dark chocolate (87%) (70g)
  • ½ tsp coconut oil

Equipment

  • blender or food processor

Method
 

  1. Combine shredded coconut, vanilla, mango puree, and coconut yogurt (if using) in a bowl. Mix until it comes together. If it doesn't stick, add a little more yogurt.
  2. Pop the mixture in the fridge for 15-30 minutes to firm up.

  3. Take small portions and shape them into egg forms with your hands.
  4. Place the eggs on a lined tray and put them in the freezer while you melt the chocolate.
  5. Melt dark chocolate and coconut oil for coating and dip each egg until fully coated. Place on the baking paper.
  6. Let the chocolate set in the fridge before serving. Enjoy!
