What if my dough is too sticky?
You might add a bit more oats but refrigerating before forming into balls helps as well.
Ingredients
Dates: natural sweetener and a great alternative to refined sugar. Dates are rich in nutrients such as fiber, potassium, and magnesium. They also contain antioxidants and anti-inflammatory compounds. Dates are a great source of energy and can help regulate blood sugar levels.
Oats: Makes the dough thicker. A whole grain that is rich in nutrients such as fiber, protein, and healthy fats. They are also low in calories and have a low glycemic index, which means they can help regulate blood sugar levels.
Gingerbread spice mix: a blend of spices such as cinnamon, nutmeg, allspice, ground cloves, and/or ground cardamom and ginger that gives Christmas truffles their distinct flavor. These spices not only add flavor but also have health benefits. For example, cinnamon is known to help regulate blood sugar levels and ginger has anti-inflammatory properties. If you don’t have it, mix together 1/4 tsp cinnamon, 1/4 tsp ginger, 1/8 tsp cloves, 1/8 tsp allspice, 1/4 tsp nutmeg, 1/4 cardamom.
Cacao: Gives the extra flavor and also helps to lose the stickiness.
Step by step instructions
Step 1. Blend all the ingredients: dates, oats, and gingerbread spice mix.
Step 2. Form into balls. The dough can be sticky. Use cocoa powder if it’s too sticky.
Coat in cacao powder, shredded coconut, or ground nuts.
Step 3. Place in the fridge for at least 30 minutes or until firm.
Optional add-ins
-Coconut flakes: Looks like snow and fits perfectly on Christmas.
-Nuts: Any nuts work, especially hazelnuts or almonds.
-Cinnamon: Use Ceylon cinnamon for maximum benefits.
-Melted chocolate: To make Christmas chocolate truffles. Add if you are a true chocoholic. I would suggest dark chocolate because the truffles are already sweet from dates but milk chocolate works as well. You might need to use more oats in that case and/or keep the dough in the refrigerator before rolling into truffles.
-Peppermint: I haven’t tried it but I am sure 1-2 drops of peppermint essential oil would fit perfectly.
