I am a huge banana fan. Not only because it tastes good but because it’s a perfect natural sweetener for baking. Above all, banana bread doesn’t need any sugar or sweeteners besides bananas.

In this recipe, I use lots of different seeds because it gives a nice consistency and they are full of nutrients and vitamins. And you might ask why I use ground flaxseeds. The reason is simple – when they are ground your body absorbs nutrients better. Actually, your body can’t digest whole flaxseeds at all.

Banana bread with oats is our go-to breakfast during busy mornings. And is by far one of my favorite healthy recipes. When we hit the gym in the morning I make it the night before. If you’re not on the run you can make it the same morning as the preparation takes only about 5 minutes or even less.

Usually, banana bread has to be in the oven for almost an hour but this one only needs a maximum of 30 minutes because it’s not that liquid.

Make sure you have an overripe banana. Firstly, mash bananas with a fork, add all the other ingredients, mix and add to a bread pan. Bake for about 20 minutes at 356°F (180°C) degrees.

Serve with homemade peanut butter or any other nut butter or drizzle over with maple syrup.

For a special banana bread, you can add sliced banana on top of the loaf before baking or even make it as banana muffins instead by using the muffin pan.

Oats: Both rolled oats and quick oats work in this recipe. I like to use quick oats for softer bread.

Bananas: Make sure to use ripe bananas because they are sweeter and keep the cake mix more together.

Ground flaxseeds: Can be left out but it’s a good source of omega 3 – alpha-linolenic acid (ALA) which is essential for good health. Your body can’t digest whole flaxseeds which means there is no benefit to consuming them whole.

Chia seeds: Can be left out but it’s also a great source of omega 3 – alpha-linolenic acid (ALA).

Cinnamon: Gives a great hint to this vegan banana bread. Make sure to use Ceylon cinnamon which is the healthiest type, contains lots of beneficial nutrients, and doesn’t have toxic properties. The ideal would be organic Ceylon cinnamon.

Step-by-step instructions

Step 1. Mash bananas with a fork.

Step 2. Add all the other dry ingredients – oats, cinnamon, chia, and flaxseeds.

– Mix and add to a loaf pan.

Step 3. Bake for about 18-25 minutes at 356°F (180°C) degrees.

– Serve with homemade nut butter.

Optional add-ins

– Shredded coconut: To add extra taste.

– Sesame or sunflower seeds: To add more nutrients.

– Vanilla extract: To make it taste more like a cake.

  • 2 bananas
  • 1 cup oats
  • 2 tbsp chia seeds

Instructions

  • Mash the bananas.
  • Add oats and mix.
  • Add chia seeds, flaxseeds and cinnamon, mix.
  • Pour in some water if needed. (I like it when it’s semi-liquid)
  • Spoon the batter into the loaf pan and bake for about 20-25min at 390°F (200°C).
  • Let it cool down 5-10 minutes before cutting.

Notes

Seeds: If you'd like to increase the nutritional value, add more different seeds such as sunflower, sesame, and pumpkin.
