Method
- Place the dates, gingerbread spice, cacao powder, almonds, and a pinch of salt in a food processor. Blend until the mixture becomes sticky and holds together when pressed. If you don’t have a food processor, roughly chop the almonds and mash the dates with a fork before mixing well by hand.

- Scoop small portions of the mixture and roll into balls.
- If the dough is too soft, chill it in the fridge for 20–30 minutes to firm up.
- Roll the balls in extra cacao powder or finely chopped nuts for a textured finish.
- Enjoy immediately, or store in an airtight container in the fridge—these balls firm up and taste even better the next day.

Nut butter - For extra creaminess, taste and healthy fats. I've tried it with almond butter
