Vegan Gingerbread Energy Balls

No refined sugar, ready in 10 minutes. Perfect for snacks, holidays, or gifting.

Ingredients
  

  • 20 dates
  • 3/4 cup almonds
  • 3/4 tsp gingerbread spices
  • 4 tbsp cacao powder
  • Salt

Method
 

  1. Place the dates, gingerbread spice, cacao powder, almonds, and a pinch of salt in a food processor. Blend until the mixture becomes sticky and holds together when pressed. If you don’t have a food processor, roughly chop the almonds and mash the dates with a fork before mixing well by hand.
  2. Scoop small portions of the mixture and roll into balls.
  3. If the dough is too soft, chill it in the fridge for 20–30 minutes to firm up.
  4. Roll the balls in extra cacao powder or finely chopped nuts for a textured finish.
  5. Enjoy immediately, or store in an airtight container in the fridge—these balls firm up and taste even better the next day.

Notes

Optional Add-Ins:
Caffeine-free coffee powder - I recommend that if you love coffee-flavored desserts
Nut butter - For extra creaminess, taste and healthy fats. I've tried it with almond butter
