Vegan Eggnog

- 1 can coconut milk (see notes)
- 4 tsp coconut sugar (see notes)
- ¾ tsp gingerbread spice mix (see notes)
- ¼ tsp vanilla extract (see notes)
Pour coconut milk into a pot or bowl.
Add coconut sugar, spices, vanilla, and alcohol if using.
Add more sugar if needed.
Put in the fridge for at least 30 min to serve cold or heat up in the pot.
Coconut milk: Substitute with any other non-dairy milk but in that case, blend soaked cashews with a bit of water and add them as well to make it creamier.
Coconut sugar: Substitute with date paste or maple syrup.
Ginger spice: If you can't find ginger or pumpkin spice, add ¼ tsp cinnamon, ¼ tsp ginger, ⅛ tsp cloves, ⅛ tsp allspice, ¼ tsp nutmeg, ¼ cardamom.
Vanilla extract: Substitute with ½ vanilla pod or ½ tsp vanilla powder.
