Method
- Cut all the vegetables.
- Mix chickpea flour with water and add all the seasoning.
- Let it sit for about 10 minutes. It will get thicker.
- Add all the veggies into the batter.
- Heat up the pan and add onion cubes to a pan for a few minutes.
- Pour the batter into the pan and fry on low-medium heat until looks ready on one side.
- Flip over and cook on the other side.
- Serve with avocado and/or salad on the side + chopped cilantro/parsley (if you're a fan).
Notes
Cooking: Keep in mind that a chickpea omelette will stick to the pan more easily than a regular omelette.
Seasoning: Using Kala Namak black salt is recommended as it will give it a more egg omelette flavor.
