- ½ cup chickpea flour
- ¾ cup water
- ½ tomato
- ½ bell pepper
- 1 green onion
- ½ white/red onion
Seasoning
- ½ tsp turmeric
- ½ tsp curry powder
- ¼ tsp garlic powder
- 1 pinch of Kala Namak or Himalayan salt
- 1 pinch of pepper
Cut all the vegetables.
Mix chickpea flour with water and add all the seasoning.
Let it sit for about 10 minutes. It will get thicker.
Add all the veggies into the batter.
Heat up the pan and add onion cubes to a pan for a few minutes.
Pour the batter into the pan and fry on low-medium heat until looks ready on one side.
Flip over and cook on the other side.
Serve with avocado and/or salad on the side + chopped cilantro/parsley (if you're a fan).
Cooking: Keep in mind that a chickpea omelette will stick to the pan more easily than a regular omelette.
Seasoning: Using Kala Namak black salt is recommended as it will give it a more egg omelette flavor.
