Creamy vegan eggnog that is easy to make, dairy free, egg free and refined sugar free. Only 4 ingredients, prep time 5 min, and it's perfect for the holidays.

Ingredients

  • 1 can coconut milk (see notes)
  • 4 tsp coconut sugar (see notes)
  • ¾ tsp ginger spice (see notes)
  • ¼ tsp vanilla extract (see notes)

Instructions

  • Pour coconut milk into a pot or bowl.
  • Add coconut sugar, spices, vanilla, and alcohol if using.
  • Add more sugar if needed.
  • Put in the fridge for at least 30 min to serve cold or heat up in the pot.

Notes

Coconut milk: Substitute with any other non-dairy milk but in that case, blend soaked cashews with a bit of water and add them as well to make it creamier.
Coconut sugar: Substitute with date paste or maple syrup.
Ginger spice: If you can't find ginger or pumpkin spice, add ¼ tsp cinnamon, ¼ tsp ginger, ⅛ tsp cloves, ⅛ tsp allspice, ¼ tsp nutmeg, ¼ cardamom.
Vanilla extract: Substitute with ½ vanilla pod or ½ tsp vanilla powder.
