Gluten Free Gingerbread Cookies

These gluten free gingerbread cookies are a healthy substitute for regular gingerbread. You'll only need 3 ingredients. These gingerbread cookies are 100% gluten-free, dairy-free, refined sugar-free, and vegan.

Ingredients

  • 12-14 dates (see notes)
  • ¾ cup almond flour (see notes)
  • 1 tsp gingerbread spice mix (see notes)
  • ¼ tsp vanilla (optional)

Instructions

  • Blend the dates. Soak them in the water if needed to make them softer. (If you don't have a blender, mash them with a fork)
  • Mix gingerbread spice and almond flour. Add to the dates and mix.
  • Add vanilla (optional).
  • Add more almond flour if it doesn't stick together as dough should.
  • Put the dough in the fridge for about 20min.
  • Form into cookies or use a cookie cutter and place them on the prepared baking sheet.
  • Bake at 356°F (180C) for about 20-25min or until brown and stay together like a cookie. 

Notes

Baking: They might be soft when they're still warm. Before taking out of the oven, make sure that the cookies are totally ready and won't need any more baking. Let them cool down and they will be just like regular cookies.
Dates: I used Medjool dates but any other will work as well. Just make sure to soak other types before to make them softer.
Almond flour: You can add more flour if you'd like it to be more like a regular cookie and less caramelly.
Gingerbread spice mix: If you don't have it, add 1/4 tsp cinnamon, 1/4 tsp ginger, 1/8 tsp cloves, 1/8 tsp allspice, 1/4 tsp nutmeg, 1/4 cardamom (optional).
